Local baker cultivates niche breads

TIPP CITY — Deborah Spencer, of Tipp City, has discovered a local niche for her unique talents – organic bread baking, using many local ingredients and specializing in long-rise sourdoughs and unusual breads.

Customers of Miami County Locally Grown, the area’s Virtual Farmer’s Market based in Troy, have come to appreciate the variety of products she offers, as they are simply not found ANYWHERE else. Why? Because her commitment to organic ingredients, ancient grains, and historic recipes is unparalleled in our region.

That is what makes her Organic Bread CSA offering so intriguing… when you sign on for this unique, four month CSA (community supported agriculture) program, you’ll enjoy a new full loaf of bread each week from September 5th to December 19th. 15 weeks with a different loaf, right in time for holiday events, family gatherings, thick soups.

In September, enjoy “Sprouted Hearth Loaves” such as hearty Sprouted Amaranth and Sprouted Spelt. October’s harvest theme, “Seeded Breads”, includes Sunflower Flaxseed and Sesame Wheat. You’ll give thanks in November for “Sweet Breads” Sourdough Cinnamon Swirl and Rye Raisin Pecan. Finally, December’s beautiful Brioche and other “Rich Breads” will be just in time for the holiday season!

To top it off, Deb is determined to locally source as many of her ingredients as possible, from honey, maple, and sorghum to herbs, wheat, spelt, lard, and eggs.
