Restaurant inspections

Restaurant inspections are performed in the county by Miami County Public Health, except in Piqua, which has its own health department. Oct. 14

Bob Evans, 1749 W. Main St., Troy — Main cooler line is fermenting food items to a four-hour hold time.

Heck Yeah, 5795 N. County Road 25A, Piqua — Walk-in beer cooler downstairs has issues with ceiling and wall panels. Fix, replace, re-secure walls and panels properly. Continue to work on floor tiles. Repair floor when needed.

Jimmy Johns, 1888 W. Main St., Troy — The gaskets on three doors of back prep refrigerator are torn and need replaced.

Papa John’s, 779 W. Market St., Troy — Previous issues resolved at this time. Observed a leak from pipe below three-tank sink. Manager is aware and has reported for repair.

Oct. 15

Piqua Fish and Game, 9344 N. Spiker Road, Piqua — Food service good at time of inspection.

Oct. 16

Angela’s Circle of Friends, 2910 Stone Circle, Troy — Discussed how to calibrate a thermometer with worker. Satisfactory at time of inspection.

Jadco Sun, 1046 S. Miami St., West Milton — Sponge being used in three-tank sink area. Sponges can only be used in non-food contact surfaces and areas. Please replace. CORRECTED.

McDonald’s, 127 N. Miami St., West Milton — A metal piece was placed on wall behind three-tank sink that has come loose to allow growth because of wet conditions. Repair area and clean well.

Oct. 16

Piqua DQ Grille & Chill, 1288 E. Ash St. — Observed food employee return from break and not wash hands before attempting to begin food prep. Must wash hands for 20 seconds after breaks, before putting on clean gloves, etc. The ranch in dispensing gun was 49 degrees and chili in holding container was 109 degrees. Keep all TCS foods below 41 degrees or above 135 degrees at all times to prevent bacterial growth. Knives only being wiped with sanitizer every two hours. Must be washed with soapy water, rinsed with clear water, and then sanitized every four hours of continuous use. Observed cracked food containers. All food containers must be smooth and easily cleanable and free from defects that may harbor bacteria. Discard. Food employee washing dishes was not rinsing after washing with soapy water. Must rinse after soapy wash so sanitizer can be effective on utensils. The interior of the prep unit needs cleaning.

Oct. 19

Taco Bell, 1234 E. Ash St. — Satisfactory at time of inspection.

Oct. 20

Hot Head Burritos, 1567 Covington Ave. — Satisfactory at time of inspection.

Arbys Roast Beef, 1230 E. Ash St. — Time not marked on roast beef sandwiches where time is being used in as public health control. If time is used on public health control of TCS must mark time food removed from heat source or discard after four hours. The fry holding area and the fans in the kitchen need to be cleaned. Food utensils not being air dried. Must be air dried and not stacked wet to prevent potential mold growth. Provide air gap for walk in cooler drain line.

Oct. 21

Long John Silvers, 1214 E. Ash St. — Whipped cream and hot fudge kept at room temperature but marked “Keep Refrigerated.” Any food item marked “keep refrigerated” must be kept below 41 degrees at all times to prevent bacterial growth. Items discarded. The hot holding/fryer area and the container of filter powder need to be cleaned. Metal lid on hand sink at start of inspection. Do not store items in hand sink so it can be accessible at all times for hand washing.

McDonald’s East, 995 E. Ash St. — Times TCS foods were removed from refrigerator were not marked. When time is used as public health control, the time TCS items are removed from refrigerator must be recorded. Discard after four hours. Eggs at room temperature. Keep all TCS foods below 41 degrees to prevent bacterial growth, unless time is used as health control. Corrected. Provide thermometer for refrigerator so temperatures can be monitored. The drive thru refrigerator, creamer dispenser, fryer area and floors need cleaned.
